Performance and meat quality of Label Rouge chickens at different slaughter ages

ABSTRACT: This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function age at slaughter. The design was completely randomized with 5×2 factorial arrangement, slaughtering five ages (70, 90, 120, 150, 180 days) two sexes. A total 240 birds (Pescoço Pelado strain) were used, including 120 females males. Performance, carcass, physicochemical, proximate composition, muscle fiber traits evaluated. Rearing time sex had significant effects on performance-related traits, better results for interaction between slaughter effect physicochemical which cause different responses in males increasing age. For composition analysis, parameters studied only ether extract breast. increase resulted higher live weight but lower indices. Females yield greater deposition abdominal fat. tenderness drumstick breast age, both cuts more intense color redness reduced lightness starting 90 days.
